Date, Almond and Peanut Snack-Bars

These snack-bars are great for everyone, but especially for those who are very strict with eating a dairy-, sugar-, gluten- and egg-free diet. Just remember to hide these from the rest of the house – they are gone in seconds!

Ingredients:

  • ¾ cup almonds
  • ¾ cup raw peanuts
  • ¼ tsp sea salt
  • 1 cup pitted dates (make sure they are moist, otherwise soak them in water for 30-40 mins)
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • ¼ cup dried goji berries

Directions:

1. Combine almonds and raw peanuts in a food processors and blend until nuts are just smaller than a pea-size.

2. Add in the pitted dates and process until the mixture comes together, for about 15 seconds, or longer if needed. The mixture should stick together easily when you squeeze it between your fingers. If it doesn’t stick or it’s still a bit crumbly, add a very small amount of water and process it again.

3. Add the vanilla extract and cinnamon with the dried goji berries and stir in by hand.

4. Line an 8-inch square pan with baking paper. Scoop mixture into pan and smooth out with the back of a spoon until it’s level. Push down firmly all over the mixture. The more you pack it down the better the bars will hold together.

5. Freeze for at least 15 minutes and then slice into 10-12 bars. The bars are a bit fragile and can break apart, so just handle them carefully.
