INDU is not claiming to be traditional Indian – in fact, quite the opposite. INDU takes everything you think you know about Indian food and turn it on its head.

With every single dish that is plated, INDU considers it remarkable in every way. If it doesn’t make you go WOW, then you won’t find it on the menu. While there will be a nod to the flavours and spices of the sub-continent, there will always be an INDU twist or uniqueness to it, focusing on the village fresh philosophy.
INDU borrows from the villages of Sri Lanka & Southern India, yet creating something that before now has not existed, something unexpected and new.

You will not find a tandoor oven, chicken tikka or garlic naan bread. What you will find is an abundance of fresh coconuts, fruit and seasonal produce that have been used to reimagine the Indian flavours. Coconuts, fresh, pressed, grated, smoked or ground tableside into a warming traditional sambol. Banana leaves wrapping steamed fish or simply as a serving vessel, INDU wants you to feel as if you are within the village, throw away your inhabitations, eat with your hands, share with your friends and step into a world where experiences are gained.
