Oh, boy is this a goodie! Remember the expression; “You can’t have your (pan)cake and eat it too?” Well, now you can! This is a super healthy, gluten-free and protein rich breakfast without any refined sugars. These pancakes are so delicious – please trust me!<\/p>\n

Caramelised Apples:<\/strong><\/p>\n
Directions:<\/strong><\/p>\n
1.<\/strong>\u00a0Cut the apple into small squares and combine apples, water, manuka honey and cinnamon in a small pot on high heat – turn down to a simmer once the water is slightly bobbling – remember to stir\u00a0occasionally\u00a0as the honey will caramelise and otherwise burn the bottom of the pot if you don’t keep an eye on it.<\/p>\n
2.\u00a0<\/strong>Mash the banana with a fork in a bowl and combine it with the oatmeal, flaxseeds, almond milk, water, cinnamon and manuka honey and combine well with a spoon.<\/p>\n
3.\u00a0<\/strong>Take a small pan and heat some coconut oil – then take a spoon and form your pancake mixture into small round pancakes on the pan – the batch should make 3 pancakes.<\/p>\n
4.<\/strong>\u00a0Whilst you’re frying the pancakes, take a bowl and combine 1 tbsp peanut butter with as much water needed until you reach the right creamy and\u00a0drippily\u00a0consistency. Put aside.<\/p>\n
5.\u00a0<\/strong>Turn to your caramelised apples and make sure they’re soft – you still want them to have a bit of a firm feel, and not be too mushy. Take off heat.<\/p>\n
6.\u00a0<\/strong>Place your 3 pancakes on a plate, top with caramelised apples, peanut butter and sprinkle with chopped activated almonds.<\/p>\n
