Breakfast has always been my favourite. I even eat breakfast for lunch and/or dinner sometimes, that’s how much I love it.
This morning I felt like something spiced and warm, so I created this little Spiced Pumpkin Oat Porridge. It was deeeeelicious and satisfied me just right :) Don’t be scared it’s going to taste like pumpkin – it’s really not. It gives the porridge a different and fluffy texture and adds much more fibre and Vitamin A for example.
If you’re a porridge connoisseur, you will love this different take on it.
Ingredients: (Serves 1)
- 1/2 cup gluten-free oats
- 4 tbsp pumpkin purée (Boil 1 cup butternut pumpkin and run through food processor when soft)
- 1/2 cup almond milk
- 1/4 cup water
- 1/2 – 1 tsp cinnamon (however much you prefer)
- 1/4 tsp nutmeg
- 1-2 tbsp raw maple syrup
- 1 tbsp roasted pumpkin seeds (Roast on a hot pan for 1-2 minutes – sprinkle with sea salt)
- In a small saucepan, combine the gluten-free oats & almond milk. Stir until you reach a fluffy consistency. Add a little water if you think the porridge is too thick for your liking.
- Add pumpkin purée, maple syrup, cinnamon and nutmeg to the oats and combine well.
- Serve in a bowl and top with the roasted pumpkin seeds, a little bit of pumpkin purée, sprinkle of cinnamon and a little maple syrup if you want it sweeter.
