This morning I was really craving something warm and delicious for breakfast, but I still wanted to get some greens in there.
Let me introduce; The Spinach & Banana Oatmeal! Despite the name, you can’t taste the spinach at all which makes it perfect for kids too.
Get your boost of fibres, protein and vitamins with this concoction – you’ll love it :)
Ingredients:
- 1/2 cup rolled oats (gluten-free)
- 3/4 cup Almond Breeze Unsweetened Almond Milk
- 1 big handful baby spinach
- 3/4 banana
- 1 tsp nut butter (I used my homemade peanut butter)
- 1 tsp cinnamon
- Toppings: Pepitas, leftover banana, chia seeds & a dollop of nut butter.
Directions:
- Combine oats, almond milk and cinnamon in a saucepan over a medium heat. Cook until the oats have reached your preferred consistency (app. 5 minutes)
- While the oats are cooking, combine spinach, nut butter, banana and a dash of almond milk in a food processor and pulse until smooth.
- Combine the spinach mixture with the oats and stir well.
- Top with chia seeds, remaining banana, pepitas and nut butter.
