Chia Seed Pudding with Fresh Fruit & Greek Yoghurt

Ahh, breakfast – my favourite meal of the day. Mainly because it means I get to eat again after sleeping for 5-7 hours.

I love being creative with my breakfasts, but it mainly only ever happens on the weekends if I have time.

This morning I made Chia Seed Pudding and layered it with fresh summer fruits & greek yoghurt for added protein.

Chia seeds are great for weight loss if you’re trying to loose a few kg’s as they absorb 10 times their weight in water making you feel full for longer and curb your food cravings. It can also help reduce your blood pressure if you’re suffering from too high blood pressure like me. Chia seeds are also the richest plant source of Omega-3’s – they actually contain more Omega 3 than salmon, so eat your Chia Seeds on a weekly basis!

Ingredients:

  • 2 tbsp Organic Chia Seeds
  • 18 tbsp Organic Coconut Water
  • 1 medium Mango
  • 2 small Plums
  • Greek Yoghurt
  • Coconut Chips

Directions:

  1. To make the Chia Seed Pudding/Gel: In a cup combine 2 tbsp Chia Seeds and 18 tbsp Coconut Water. You always mix 1 part of chia seeds to 9 parts of water, roughly. Place in fridge for at least 1 hours, stirring occasionally or alternatively make them the night before in a sealed container/jar with lid.
  2. In a tall glass, layer like this: mango, greek yoghurt, chia seed pudding/gel, plum, greek yoghurt, mango,  chia seeds, greek yoghurt, plums, chia seeds, coconut chips.
  3. ENJOY!
