Tomato & Coconut Soup

As winter is fast approaching this is a fantastic winter-warmer soup that is so easy to make and is ready in no time.

Ingredients:

  • ½ tsp coconut oil
  • 2 carrots
  • 1 stalk of celery
  • 1 red onion
  • 3 cloves garlic
  • 1 cm grated ginger
  • 4 cups vegetable stock
  • 800g diced tomatoes
  • 1 tsp paprika
  • 1 tsp oregano
  • ½ tsp turmeric
  • Salt & Pepper
  • ½ cup coconut cream
  • ¼ cup parsley

1. Heat up coconut oil in a pan. Chop carrots, celery and red onion into squares. Sauté vegetables in the pan – add crushed garlic and grated ginger. Let it simmer for 5 minutes whilst stirring occasionally.

2. Add diced tomatoes and vegetable stock – stir until it comes to a boil.

3. Add paprika, oregano, turmeric and taste with salt & pepper.

4. Chop parsley roughly and add to soup.

5. Add the coconut cream and stir.

6. Take pan of the heat, and grab your hand blender. Blend the soup until it has a smooth consistency.

7. Garnish with a bit of coconut cream and parsley.

Celery is known for handling bad breath, being a cancer-fighting veggie, alleviate hay-fever lowering blood pressure, aid indigestion, stimulating the immune defense to fight infections and the list goes on.
