Quick Asian Inspired Cabbage Salad

This cabbage salad is super easy and requires no heat or cooking – only some chopping! Perfect for busy little bee’s.

Salad:

  • 1 cup white cabbage (chopped)
  • 4 snowpeas
  • 1 pitted date
  • 1 tbsp. pepitas
  • 20 grams sheep’s feta

Dressing:

  • 10 ml. apple cider vinegar
  • 1 tbsp. soy sauce
  • 1 tbsp. sesame oil
  • ½ tsp. coconut oil
  • ½ tsp. stevia
  • Juice of ½ lemon

1. Combine all vegetables and arrange in a bowl. Sprinkle with the chopped date, pepitas and sheep’s feta.

2. Mix all the ingredients for the dressing and pour over the salad.

Best served after 5 minutes soaking up the dressing in the fridge.
